It's fall y'all!
I must be honest...I've never been the biggest fan of the fall season...
I know...I'm crazy, right?! I'm just such a summer girl at heart! I would choose bright clothes, bathing suits & sunshine over sweaters, boots & chilly weather any day! I was basically born for life in Louisiana...or on a tropical island ;)
The reality is, we live in Canada (for a little while longer at least) so cool (and soon to be cold) weather is here to stay. This year I decided I was going to be more positive about the season change! I'm doing my best to embrace the cooler temperatures, warmer clothes & craze of pumpkin spice lattes!!! :)
I decided that baking a festive treat would be a great way to help me get excited for fall! Last night Cary & I made pumpkin chocolate chip cookies together. Turns out they taste just like they sound :) I wasn't sure how I would feel about the pumpkin flavor, but it was a really nice touch. I definitely recommend them if you're looking for an easy & different cookie for the fall season!
Pumpkin Chocolate Chip Cookies
Ingredients:
1 cup pumpkin puree
1 cup white sugar
1/2 cup vegetable oil
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons pumpkin pie spice
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla extract
2 cups of semi-sweet chocolate chips
cooking spray
Directions:
Preheat oven to 350 degrees F. Grease a cookie sheet with cooking spray.
Combine pumpkin, sugar, vegetable oil and egg. Mix until combined. In a separate bowl, sift flour, baking powder, pumpkin pie spice, salt and baking soda. Add milk and vanilla extract to flour mixture. Add pumpkin mixture into the flour mixture and mix until fully combined. Add in chocolate chips. Drop spoon size dough balls onto the greased cookie sheet, about an inch apart. Bake for about 8 to 12 minutes, until cookies are browned.
Yields: 24 cookies

Those sound good! I love anything pumpkin... Darren hates it. But that just leaves more cookies for me, right? ;)
